I don't like to fry chicken. It's messy and dangerous. However, this month we happened to have some pre-breaded frozen chicken and it was labeled as "fry only." I follow directions, remember? So while turning my chicken, the oil in the pain popped and splashed my right arm. Fortunately, after I screamed, I acted fast and the burns aren't serious, but they are painful. I have six red, tender, swollen patches on my hand, wrist and forearm. Ouch!!
For those of you curios types I served the chicken with brown rice and carrots.

Girl, we are kindred spirits. I love fried chicken. It is HANDS DOWN my favorite food. Of course, chicken anything is my favorite. I could never eat beef or pork again and live a long, happy life. But....I DON'T fry chicken. You are right. It is dangerous if you do it on the stove. Now, I know some folks that have those handy dandy deep fryer things and I hear those are way less dangerous and cook up some delicious chicken. But you know me, I am too cheap to buy one. I'll just grab some yummy Maryland's Chicken (local - VERY GOOD) when I want it.
I love homemade fried chicken. I don't make it often because like you said, it is messy and it makes my house stink. I follow a Paula Dean recipe that works very well. I have a deep griddle that I set at 350* (that is the correct temp for perfect chicken). It is a southern staple, and I serve it withj homemade mac and cheese, fried okra, white rice and gravy, corn bread, biscuits, and sometimes green beans cooked with bacon. Talk about a artery clogger, but like I said, we don't do this often. It is maybe a twice a year meal. YUM!
I am sorry you hurt you arm.
Annie: I'm gonna come to your house from now on for Fried Chicken. I'll be sure to pop a heart attack preventative Bayer Aspirin first. I have twelve blisters on my arm and had from last night's frying episode.
